Crowns fit for a king!

Tis the season for special order Crown Rib Pork Roasts!  Sure to get lots of “ooohs” and “aaaahs” when you set this down in front of your hungry holiday guests.

This is the juiciest and most succulent cut of pork. The roast comes from the rib portion of the loin, the tenderest cut of pork.   Cooking with the bones in adds to the flavor and the moistness of the meat.  It is called a crown because the rib rack  is bent into a circle and then tied together with kitchen twine. The meatiest portion of the ribs forms the bottom of the crown and face inward.

Season the meat, add your favorite stuffing to the center of the crown, roast and serve!

Here’s the before and after shots.
